Okey-dokey Artichokey

Artichoke marinara, that is, with chicken and rotini pasta.  Yum!

12oz whole-grain rotini
24oz jar spaghetti sauce
1/2 yellow squash, quartered
14oz can artichoke hearts, sliced into small pieces
3 garlic cloves
4 chicken breasts, skinless, and prepared

1.  Cook rotini according to package
2.  Combine spaghetti sauce, artichoke pieces, quartered squash and garlic in a large saucepan.  Stir and simmer until squash is tender (about 15 minutes). 
3.  Spoon 1 serving of rotini on a dish, top with chicken then artichoke marinara. 

1 cup rotini, 1 cup sauce and 1 chicken breast = approximately 370 calories, 4 grams fat and 8 grams fiber, or 7 points.
