My, My, My, Key-Lime Pie

It's so great, Kenny Chesney sang a song about Key Lime Pie!  Here's a super-good and healthier recipe for Key Lime Bars, WW Points = 3

3 TBSP margarine, softened
3 TBSP fat-free cream cheese, softened
1 1/2 cup sugar
1 large egg yolk
3/4 cup flour
2 TBSP flour
3 TBSP sugar
1 large egg (white AND yolk)
1/4 cup egg substitute
1/3 cup fresh lime juice

1.  Preheat over to 350 degrees.  Coat 8x8 pan with non-stick spray
2.  Make crust: beat margarine, cream cheese and 1/2 cup sugar with mixer until fluffy.  Beat in yolk and 3/4 cup flour; mix well.  Spread into baking dish using hands (coat with powdered sugar to keep from sticking to your fingers - ick!).  Bake about 15 minutes, until crust in browned.
3.  Make filling: beat egg and egg substitute.  Add remaining cup of sugar and 2 TBSP flour; beat until blended.  Add lime juice and beat until all ingredients are blended.  Pour onto warm crust and bake additional 15 minutes.
4.  Cool on a rack and sprinkle with 2 TBSP powdered sugar.  Cut into 16 small pieces and enjoy!
