Cheesey Broccoli & Cauliflower Soup

Minus the fact that it slightly resembles baby vomit, it's really a delicious recipe!  The recipe I found calls for the soup to be "blended and pureed;" next time, I'd skip it!

1 1/2 tsp olive oil
1 onion, diced
1/4 cup flour
32 oz reduced-sodium chicken broth
12 oz bag broccoli and cauliflower
1 cup shredded reduced-fat Monterrey Jack and cheddar cheese blend

1.  Heat oil in large saucepan.  Add onion and cook until tender (5 - 7 minutes).  Add flour and cook, stirring continually, for about 1 minute.  Slowly add in broth, stirring continually.  Add broccoli and cauliflower.  Bring to a boil, then reduce to a simmer for about 10 minutes. 

2.  The recipe calls for soup to be blended and pureed at this point.  I did, but I would skip it next time. 

3.  Add cheese and stir until melted. 

**  Because I needed a few more points, I served whole wheat Italian bread with it, perfect for dunking  (and adding 4 points, for 2 slices) to my total.

Weight Watchers points (I think, if I calculated right ...): 2 per 1 cup serving.
