Beans, Beans ...
Yeah, you know the rest! This came to us from Lauren - thanks!!! I haven't tried it yet, but it sounds super and I wanted to share!
Lauren's Bean Burrito's (or tacos or nachos)
1 medium onion, diced
1 tbs olive oil
2-3 cloves garlic, chopped
1-48 oz jar of mixed beans, drained (I use the Randall brand, but any will work)
2 regular sized cans of diced tomatoes w/green chilis added, drained
1 small can of tomato paste
2 tbs chili powder (or more if you like it extra spicy)
2 tbs ground cumin
1 tsp cilantro
In a large pot, add the olive oil and onions and cook on medium heat until the onions have sweated and are starting to carmelize, about 5-10 minutes. Add the garlic, tomatoes, chili powder, cumin, and cilantro and mix well. Allow the mixture to come to a boil, then add the tomato paste & beans. Allow it all to come back to a light boil, then turn the temperature down to med-low and let it simmer for at least 30 minutes.
Tip: The longer you let it simmer, the better it gets! Sometimes I will make it 2-3 hours before dinner time.
